Céleste is 6 years old. She is fascinated by the snails that she finds in the garden. 

This one she called Leo. She found him this morning on a wet blade of grass. She likes to watch him moving slowly with his house on his back. She noted that he moves at the speed of 3 human steps per hour.

I like to spend time with Céleste and his brother Robinson on Wednesday. Every day, they learn how to take their time and savor seasonal products rich in taste, and to assess the quality rather than the quantity.

The snail is also the logo of "Slow Food", which endeavors to defend the regional culinary heritage.
